Slammin Vegan Cupcakes

Previous to my life as an herbivore, I couldn't have cared less about baking, or trying new recipes. Now? I can't wait to try a recipe, especially when I come across offerings like this...

Man... Vegan Cupcakes All Over The World has to stop playing with my heart like this. A sistah ran to C-town with the quickness after visiting the blog, to get the needed ingredients (2 tsp of cornstarch to replace egg in baking recipes) to flex my cruelty-free baking muscles.

You can easily create Vegan Frosting with: 2 parts sugar, 2 parts Vegan Butter (Earth Balance recommended), and 1/2 part rice milk or other vegan milk blended. Vanilla extract or other flavorings recommended.

Play around a bit.

You may want to add a bit of cornstarch or agar to thicken. Tofutti non-gmo cream cheese (WholeFoods carries it) can also be added to make a fabulous frosting. Natural coloring can be found among fruits and veggies. Veggies in trace amounts don't affect the taste. For instance, a bit of spinach will make frosting very green without adding taste. Blueberries will affect the taste a bit unless used sparingly, but will help create a nice violet color...

Zested orange peels, lemon, or carrots can help with sunset colors... Strawberries make nice pinks...

Basic Vegan Cupcake recipe:

Blend the following together, and pop it into your oven greased cups for 25-30 minutes.

1 cup vegan milk (eg. rice milk, soy milk, hemp or almond milk)

2 tsp cornstarch (replaces egg as a binder)

1 1/2 cups flour (wheat flour, or regular)

1/8 tsp baking soda

1/4 tsp seasalt

1/4 cup vegan butter (Earth Balance comes highly recommended)

1/2 cup organic fair trade sugar (make sure the sugar isn't supporting modern dya slavery wherever possible--- Whole foods seels fair trade items---You can ask your local grocer to stock them--- look for the fair trade symbol)
